Breads Rise Again
Bread is back. Americans are breaking away from the low-carb craze and slowly returning to their creature comfort foods , like bagels, biscuits, sourdough and ciabatta.
The new focus is on ‘quality carbs’. The latest dietary guidelines emphasize whole grain which is now available in a variety of tastes and textures.
Even traditional white bread has become more healthful. Most of today’s grocery store white bread is enriched with nutirents like iron and an assortment of B vitamins. But white breads are beginning to combine whole grains with traditional white bread flavor. The blending of a special white whole grain flour with traditional white flour provides the taste, texture and softness of white bread with the health benefits of whole grain.
Whether its the nutty taste, the heartry texture or the health benefits, for some, it’s whole grain or nothing. More than 400 new whole grain foods were introduced last year making it easier for consumers to get join the whole grain trend.
A daily dose of three or more one ounce servings of whole grain products are the recommendation. Whole grain bread not only helps in weight management, studies have shown that it can reduce cholesterol levels and normalize blood pressure levels.
Whole wheat flour is made from all three parts of the wheat grain, the bran, germ and endosperm. White flour is made just from the soft endosperm of the wheat grain and is generally bleached for its whiter color. White whole wheat bread is made from all three parts of a special variety of wheat that is milder in flavor, lighter in color and has a softer texture.
Consumers are welcoming bread back to their lives and their table in hundreds of ways partly because it is so convenient, but partly because its a perfect partner for so many other nutrient-rich foods. The sandwich with layers of lean deli meat, calcium-rich cheese, crisp greens and a slice of green pepper is hardly unhealthy fast food. Fruit-topped French toast is a delightful way to brighten the day and bread pudding made with eggs and milk provides a perfectly sweet ending to any meal. bread.
